Micotoxinas: ¿Qué son y cómo afectan a la salud pública?

Los hongos producen una gran variedad de compuestos tóxicos, conocidos como micotoxinas, son de gran importancia debido a que se encuentran presentes como contaminantes de alimentos de consumo humano y animal, principalmente cereales los cuales son la base de la alimentación en México y en países en desarrollo. Los efectos adversos de las micotoxinas incluyen el cáncer de hígado, problemas en el crecimiento infantil, cáncer de esófago, defectos en el desarrollo del tubo neuronal, daños al sistema inmunológico y enfermedades renales. Por lo cual, su estudio es de gran importancia en lo que respecta a la salud pública.
