Abstract

Fungi produce a variety of toxic compounds, known as mycotoxins, which are of great importance because they are found as contaminants of foodstuffs for human and animal consumption, mainly cereals which are the basis of nutrition in Mexico and in developing countries. The adverse effects of mycotoxins include child growth impairment, defects in neural tube development, damage to the immune system, kidney diseases, and increased chance of developing liver and esophageal cancer. Therefore, its study is of great importance in terms of public health.
