The Maya nut: a functional food proposal in Mexico

The seed of the capomo tree or ramon tree, which is nicknamed as the Maya nut, has antioxidant capacity comparable to quinoa and amaranth, in addition to other nutritional qualities and applications described in this article. The leaf from the ramon tree itself is more antioxidant than the seed, so a cup of tea could provide important benefits. This article describes the origin of this tree and the properties and characteristics of the components of the Maya nut, as well as new consumer products based on this Mexican seed.
